I’ve finished this one with a smooth-iced Agave Buttercream—it is by far my favorite right now. I used a fine cornmeal in this bake to ensure the texture stays light and delicate, not heavy or dense. You still get that beautiful, natural sweetness from the cornmeal, but it melts into the bright citrus and the clean finish of the agave.
